		<description><![CDATA[Hi Gemma, a percolator is like an espresso machine except the coffee goes around and around, so you need to keep an eye on it to take it off the heat when it gets dark enough. You don&#039;t want the bulk of the coffee to be at boiling temperature or it will be &#039;stewed&#039; - all those volatile oils will have cooked off. The same rules apply - freshly ground beans are best, and also a small sieve is handy as you do tend to get some grounds in the cup as well. As for my coffee keeping people up, well I mostly only drink my coffee first thing in the morning for that very reason!]]></description>
